Hilton unveils industry-first F&B creations

From a six layered cake to a premium gin cocktail, Hilton has expanded its menu with new unique dishes

Calling all food and drink lovers – Hilton is adding four new mouth-watering, unique creations to its menu, available in 31 UK Hilton hotels from London to Edinburgh, and 145 hotels across Europe, Middle East and Africa.

The brand-new creations have been developed as part of Hilton’s annual Flavour and Flair competition, where Hilton’s talented food and beverage team members from across Europe, Middle East and Africa go head-to-head with their creations, competing to have their drink or dish featured on Hilton menus across the region.

A long-standing pioneer on the flavour-front, Hilton kitchens and bars across the world are responsible for the birth of world-famous F&B firsts, from the Pina Colada, Waldorf Salad and even the Red Velvet cake.

Continuing with the trail-blazing, the four newest taste sensations are:

Pastry perfection … The Belle Provence

A delicious six layered sponge cake, tiered with a surprising combination of fresh rosemary, sweet almond and juicy apricot compote.

Creator, Chef Ankit from Hilton Salwa Beach Resort & Villasin Qatar, took inspiration from the region of Provence in France, which produces the largest amount of apricots, to bring this baking creation to life.

Cocktail’s finest … The Simia Sour

Be transported to the tropics with this perfectly balanced cocktail by mixologist Andrea Volajova from Hilton Prague, Czech Republic.

Featuring a range of fresh botanicals of gin, zesty lemon juice and punchy cranberry juice, topped off with a foam of egg white.

Mouth-watering mocktail … The Zinggreen Frost

A health fuelled mocktail, bursting with luscious cold green tea, aromatic ginger water, lemon juice and sweet honey, with a touch of mint to finish. Bartender Mohammed Hassan from Hilton Hurghada Plaza in Egypt, wanted the drink to provide a refreshing hit of zesty goodness with every sip and move away from calorie laden, sweet concoctions.

Punchy power bowl … The Rainbowl

A stunning power bowl like no other. Chef de Partie Pedro Caetano from Conrad Algarve in Portugal took inspiration from the colours of the rainbow.

His creation features bright blueberry salmon, delectable quinoa and black chia, salty granola and a whole range of exotic vegetables and fruits which creates the stunning rainbow effect.

Emma Banks, Vice President of F&B Strategy & Development EMEA, said: “For over a century we have been serving up industry firsts, from the Pina Colada to the Red Velvet cake.

“Our culinary and cocktail teams are more determined than ever to be innovating and creating world famous F&B. By galvanising our talented team members with the Flavour and Flair competitions, it inspires them to create the next big dishes, that will help us lead trends for the next century.

“Now available in the UK, make sure you visit your nearest Hilton to sample them all for yourself!”

The creative team behind Castle of Light has unveiled a first look at this year’s mesmerising sensory show, as general tickets go on sale.

Celebrating ‘hidden treasures’, the 2021 show is set to put a spotlight on the lesser-known stories from Scotland’s past. Projections unveiled today tease the re-discovery of the Honours of Scotland, the return of Rex the lovable lion rampant and a first look at some of the secrets of St. Margaret, and the treasures within her chapel, ahead of the show launch in November.

Tasked with uncovering stories, old and new, Castle of Light promises to bring tales to life with the use of stunning visuals, state-of-the-art projections and captivating storytelling.

Creative Director Andy McGregor, who is working alongside Double Take Projections, NL Productions and War Productions Ltd, in partnership with Historic Environment Scotland, on this year’s event, said: “We are hugely excited to be back with a new show for 2021. The fact that we couldn’t make it last year has given us 2 years to develop HIDDEN TREASURES and we truly believe it will be worth the wait.

“There will be new takes on popular family features plus a whole lot more in the way of legend, light and sparkle – all inspired by the lesser known stories of this incredible site. Edinburgh Castle is a magical place at any time but a visit by night with over a dozen unique light and sound experiences to enjoy really makes it Scotland’s unmissable winter experience.”

Heather Soutar, Head of Commercial Development at Historic Environment Scotland (HES), which operates Edinburgh Castle, said: “We are thrilled to welcome back Castle of Light this year, especially following the success of our last event in 2019.

“This year, we are inviting visitors to explore Scotland’s untold history as we take them on a journey using state-of-the-art projections at Edinburgh’s iconic landmark. Prepare to be amazed by the biggest light experience the capital has to offer, we can’t wait for everyone to experience it.”

Edinburgh Castle will be home to the immersive walking tour for eight weeks throughout the festive season, from Friday 19 November 2021 to Sunday 9 January 2022.  Tickets are on sale now.

Tickets are also available for an ‘Access’ night taking place on Thursday 25 November, designed to cater for people with additional support needs, including autism and dementia.

Ensuring as many people as possible can experience the animated storytelling tour, the evening will feature a range of specific support, including British Sign Language interpretation and audio described tours, as well as a designated quiet space and ear defenders to help manage noise.

Adult tickets cost £20, with concession rates, family tickets and discounts for Historic Scotland members available. For more information and to get your tickets, visit CastleofLight.scot.

Luckenbooths will open in the heart of Edinburgh’s Old Town, offering a refreshing twist on much loved classic dishes with the same high-quality, exceptional dining experience locals have come to love from the award-winning hospitality company.

Taking its name from the locked booths which used to exist on the ground floor of the magnificent tenement buildings that formerly stood at the north of the historical Royal Mile, Luckenbooths will bring a much needed contemporary, family friendly offering to the city centre.

Located at 329 High Street, Luckenbooths is set to welcome back a familiar face with former chef from The Bon Vivant, Emma Clark-Szabo (above) returning as Head Chef.

Working closely with some of the finest suppliers in Edinburgh, Clark-Szabo has created mouth-watering dishes inspired by their fresh and flavoursome produce, with honey straight from the hives of Edinburgh Honey CO in Leith, bespoke batch whisky from Woven Whisky, and freshly caught lobster from Belhaven Lobster.

With the new menu designed to celebrate the best of Scotland’s local larder, guests can start the day with a hearty stack of Scotch pancakes complete with oat crumble and Edinburgh Honey Co. rose honey, or fresh and delicious beetroot glazed Scottish smoked salmon royale, with dill crème fraîche and rye toast.

The all-day menu presents a wide selection of dishes catering for the entire family, with Campbell’s haggis & beef shin bon bons, a Moving Mountains® vegan burger, and a crispy duck bowl with Asian ‘slaw, watermelon and toasted sesame – there is something for everyone to enjoy.

Guests can also take in the historic surroundings of Edinburgh’s old town while enjoying a dram or a glass of wine on the Luckenbooths spacious outdoor terrace. As with the other The Bon Vivant Group venues, the team have worked with The Bon Vivant’s Companion to put together a curated selection of wines, beers and spirits specially selected to complement the menu.

Luckenbooths is also set to offer a specially created children’s menu with a range of delicious small and large plates that will delight diners of all ages. The menu will include a Scottish beef burger, family favourite mac & cheese with vegetables, and for dessert a delicious chocolate brownie or mini plum mess.

Anthony Hester, Director at The Bon Vivant Group said: “Luckenbooths is a fresh, new, family friendly concept for The Bon Vivant Group where guests can gather every week to catch-up over drinks with friends, come together with family for Sunday lunch or celebrate those big life moments with those closest to us.

“We have taken all of the classic elements of casual dining fused with the high quality, excellent customer service of our other venues and created a space that is central, contemporary and most importantly, family friendly.
