Healthy Heart Tip: Healthy Hearty Soups

Soups are great for lunch or dinner, or even as a snack between meals in a mug. When planned properly, soups can be a healthy, balanced meal and be a great way to increase your intake of vegetables. They’re usually a low cost per portion, great to make in bulk and convenient to warm up in a hurry or take out and about in a flask.

We’ve outlined some tips for building a balanced, nutrient-dense soup below:

Base

A great soup starts with a tasty base. Sautéed onions, celery and garlic make a wonderful starter for most soups.

Next select your stock, homemade is best and the most cost effective as you can make it from leftover meat bones and vegetables. Shop-bought stock cubes can be high in added salt and sugar so if you are using these make sure you choose a low-salt and low-sugar variety or leave it out altogether.

You can use herbs and spices to add depth of flavour.

Carbohydrates

White potatoes, sweet potatoes, wholewheat noodles/pasta, and brown rice are all great options for adding to soup.

They provide a healthy source of carbohydrates to give you the energy you need to fuel your body.

Vegetables

All vegetables work well in soups, try choosing ones you wouldn’t usually eat to increase the variety in your diet.

Butternut squash, parsnips, carrots, cauliflower and broccoli are great options.

Protein

Protein is often forgotten in soups, but it is an important nutrient for growth and repair in the body. It also helps us feel fuller for longer which can help us maintain a healthy weight.

Healthy sources of protein include chicken, turkey, fish and low-fat cheeses. Plant based options such as different varieties of lentils and beans are healthful options, and these are a cheap option for bulking up soups.

Brand new £1.6 million bar opens in Edinburgh Airport

 Double the All Bar One fun … Popular bar and restaurant chain, All Bar One has opened up a second site in Edinburgh Airport.

Meaning the existing site, near gate 6, is now joined by a stunning new addition by gate 15. The new £1.6 million venue opened its doors in the airport on Wednesday 28th December, so guests can now enjoy All Bar One favourites at both ends of the airport terminal. 

The new bar seats 200 people, and is open daily from 4am until 9pm serving up breakfast, brunch, cocktails and low & no alcohol drinks! Whatever your next destination, make sure to stop in at All Bar One on the way.

Edinburgh Castle reveals reimagined Scotch Whisky

Historic Environment Scotland (HES) has revealed its refreshed Edinburgh Castle whisky recipe, packaging design and bottle shape, introducing a modern edge to the landmark Scotch. 

Paying homage to the eponymous icon behind the single malt Scotch, the simplified label showcases a sketch of Edinburgh Castle, while allowing the russet-coloured liquid to speak for itself as it shines through the bottle. 

With the updated whisky launching off the back of Burns Night celebrations, HES views this as the perfect opportunity for people to try the Edinburgh Castle 10-Year-Old Highland Single Malt Scotch Whisky. 

Natasha Troitino, head of retail at Historic Environment Scotland, which operates Edinburgh Castle, gives a hint of what people can expect from the new liquid: “On the nose, there are a myriad of shortbread biscuit notes with a hint of vanilla essence and honey.

“To taste, there are an abundance of earthy sherry flavours, orange peel with a vanilla, shortbread note, with just a hint of earthiness at the end from time spent in ex-sherry casks.”

In celebration of the launch, HES has also partnered with award-winning Scottish mixologist Sean Cavanagh to create a signature serve using the Edinburgh Castle 10-Year-Old whisky.

Using Sean’s expertise and flair for flavour, he has identified key ingredients to enhance the flavour profile and tasting notes of the Scotch to deliver a delicious signature serve – 

Edinburgh Castle Single Malt signature serve recipe: 

o   40ml Edinburgh Castle 10-Year-Old whisky

o   10ml Creme de Banane 

o   5ml Pedro Ximéne

o   25ml lemon juice 

o   10ml honey/agave (if vegan) 

o   1 drop orange blossom water 

o   25ml egg white/ 4 drops vegan foamer (if vegan) 

Simply shake, strain into a glass and garnish with 3 drops of angostura bitters.

Extending the range, the single malt – distilled and bottled in Scotland and exclusively sold at Edinburgh Castle shops and the Stòr online shop – is now also available in three sizes: 5cl (£7.50), 20cl (£24) and 70cl (£56).

Burns Night cocktail recipe crafted by Scottish gin brand Caorunn

For those non whisky drinkers, why not look at some handcrafted, small batch Scottish Gin. Caorunn (pronounced ka-roon) Gin comes from the Gaelic name for Rowan Berry, which grows wild within a 5-minute walk from the distillery.

The Rowan Berry is infused with five other locally foraged botanicals including dandelion leaf, heather, Coul blush apple and bog myrtle along with six traditional gin botanicals and natural Scottish water. Fresh and floral on the nose, this gin is clean, sweet, full-bodied and aromatic with a long-lasting dry and crisp finish. 

Burns Cocktail (Cranachan Cocktail)

35ml Caorunn

15ml Calvados

15ml Honey syrup

15ml Freshly squeezed lemon juice

5 Fresh raspberries

20ml Pasteurised egg white

Top soda

Shake first 6 ingredients and double strain into hi-ball.  Fill glass with ice and top with soda water. Garnish with large cinnamon stick and cinnamon sugar dusting.

When I was looking into Burns Night drinks, I found that a lot of them were very focussed on quite masculine flavours and were generally whisky heavy (writes ELLIE TAYLOR).  

I looked into doing a savoury cocktail to sit alongside the traditional Burns meal but felt as though this was a little bit too obvious and wanted to do something that was a bit more relevant.  

Cranachan came up a lot as the most popular Scottish dessert associated with traditional meals so I thought I would play about with the flavours and ingredients found within that. Rather than using apple as a direct ingredient, I used Calvados (apple brandy) to bring apple into the recipe and also bring additional complexity and depth. Apple and raspberry is a really classic Scottish flavour combination.

This is a drink designed to appeal to a wide audience, to be enjoyed after your traditional Scottish meal and one which stays true to Caorunn.

Aldi launches incredible deals on Burns Night dishes

Aldi Scotland has launched its popular budget friendly Burns Night range.  

In store from 19 January, the discount retailer is once again offering unbeatable prices on its celebratory Burns Supper spread meaning up to four diners can enjoy a full Scottish feast of haggis, neeps and tatties for just £0.81pp (£3.26 total*). 

This year, Aldi Scotland will be serving up its exceptionally popular Macaulay’s Haggis at a promotional price of just £1.49 (454g). In addition, the retailer will also have a limited number of Simon Howie’s Specially Selected Chieftain Haggis for just £3.39 (908g). Made by the Perthshire-based butcher to the traditional Scots recipe, Simon Howie pride themselves on quality food at budget-friendly prices.

St James Quarter celebrates Chinese New Year with Lion Dance procession and gift voucher giveaways

It’s the Year of the Rabbit and as people in Edinburgh prepare to celebrate Chinese New Year, St James Quarter has unveiled its exciting line up of celebrations taking place this weekend.  

On Saturday 21st January, St James Quarter will play host to a range of Chinese New Year-themed activities including a traditional Lion Dance procession, on Register Square in an eye-catching and colourful display.

Performed by the talented team at Yee’s Hung Ga Kung Fu Edinburgh, the Lion Dance is commonly performed during Chinese New Year to bring good luck and guests will be able to enjoy two performances throughout the day at 12pm and 1pm. 

St James Quarter will also be taking part in the traditional act of gift giving that is associated with Chinese New Year. Lucky shoppers will have the chance to get their hands on a limited number of red envelopes including gift cards – symbolising good wishes and luck for the year ahead. These will be handed out by the Guest Services team on Level 1 between 12 – 4pm and can be redeemed at retailers within the Quarter. 

John Lewis will be inviting guests to learn the intricate art of Chinese calligraphy and create their own red banner for Lunar New Year on Level 1 of its store from 2pm, and brands including Charlotte Tilbury (located within H Beauty), LEGO, L’Occitane and Coach, will be showcasing Chinese New Year inspired limited-edition items.

Kay’s Bar scoops CAMRA beer quality award

Kay’s Bar in Edinburgh’s New Town has a reputation for selling top quality real ale and this has resulted in Kay’s being awarded the local CAMRA (Campaign for Real Ale) Branch’s 2022 Real Ale Quality Award.

CAMRA’s members provided beer quality scores during 2022 when visiting real ale pubs in the Branch area (there are over 300) and Kay’s came out top for its average score – not only in Edinburgh but throughout the Lothians and Borders.

The presentation will be made by the CAMRA Branch Chair, Pat Hanson, to Simon Fisher, manager at Kay’s, at 8pm on Thursday (19th January 2023) at the pub.

On hearing the news of the award Kay’s landlord Fraser Gillespie said: “We are delighted with this recognition by CAMRA of our commitment to serving a range of  quality real ales”

Runners up in Edinburgh were the Mitre (Royal Mile) and the Dreadnought (Leith).
