Care home’s new cooking class is better than sliced bread!

Bread making masterclass inspires creativity amongst home’s residents

Residents at a local care home have enjoyed a series of cooking classes as part of the bustling events calendar, with the programme kick-starting with a bread making masterclass.

The sessions held at Cramond Residence, courtesy of the home’s Chef Paul Cowley, hope to inspire creativity and reignite a passion for cooking amongst the residents.

This month’s masterclass focused on bread making with future sessions set to feature foods from all over the globe – following residents’ wishes.

Cooking is just one of the activities the home provides as part of its events calendar which is tailored to the residents’ interests, with the aim of improving their wellbeing and independence. Other activities include exercise classes, arts and crafts and frequent day trips.

Paul, who alongside the head chef leads the catering department at the 74-bedroom home, said: “I love seeing the smiling faces of our residents as they take part in activities that remind them of home comforts such as cooking.

“Residents enjoyed a step-by-step session on how to make bread from scratch. We sampled the bread, tasting the different types of loaves and comparing it to shop bought bread.

“Many of our residents already have a passion for cooking so we wanted to introduce the classes to continue that enjoyment while allowing some of the group to learn new skills and try different cuisines.

“As well as the pleasure of cooking, the class also provides a fun setting where residents can enjoy socialising with others in the class. The buzz of happy chatter in the dining room is ample payback for the work we do.”

This month’s activities include garden archery and golf sessions, spa and relaxation mornings and physio classes, organised by Cramond Residence’s dedicated Lifestyle Coordinators who are committed to providing fun and engaging activities for the residents to enjoy.

Len Skelton, a resident at the home said: “I always enjoy the meals cooked up by chefs at Cramond, however it is really nice to be given the opportunity to get back in the kitchen again.  Who doesn’t love the taste of fresh bread out of the oven?”

In addition to freshly prepared nutritious meals and a robust excursions and activities calendar, residents are provided with deluxe accommodation, best-of-class facilities and a wide range of entertainment.

The medication and care provided is based on a detailed personal care plan, which is continually assessed and revised by health care professionals and other experts to ensure that the best possible care is being delivered.

Facilities provided include a cinema and function room, a dedicated games room and also a sensory experience which offers therapeutic activities for those with dementia.

Cookery students help make Aldi opening event taste great

Edinburgh College Professional Cookery students gave customers at the new Aldi store in Tranent a taste of the skills they have picked up on their course at the shop’s opening day event.

The students braved the cold October weather to prepare tasters of recipes they had prepared using Aldi products. Customers were delighted to sample butternut squash soup, chocolate tarts, tandoori salmon with naan bread, and beef tagliata, and snapped up recipe cards to use at home.

The students demonstrated their preparation techniques when dishing the recipes and walked around the store to serve tasters to customers. This is the second store opening the students have attended, following the opening of the Cowdenbeath store last month, and gave them great practical experience and the chance to engage directly with customers and hear their positive feedback.

The five students are all studying SVQ Level 2 Professional Cookery at the college. Their course prepares them for working in the professional cookery industry by pairing training in food preparation and restaurant service. Students use these skills working in the college’s Granton Campus canteen and the two training restaurants, The Apprentice and eh15.

Student Kerry Robertson said: “This has been a really great opportunity to work and show off what we’ve learned on our course. I don’t have a job in the catering industry yet, so events like these give me the experience I need to take to future employers. I’ve been serving the samples to the customers today and had some really nice comments.”

Lecturers Chris Cockburn and George Baker accompanied the students. George said “We’re really grateful to Aldi for giving us the opportunity to help out with their store opening. It’s valuable for us as a college and for the students, as it lets people know just how high quality our students and teaching are.”

One Parent Families Scotland are planning cookery classes for single mums and dads and the kids at Craigroyston Community High School.

The classes will run on Tuesdays, Wednesdays and Thursdays (10am-12.30pm) from 7 – 16 April.

Creative cookery on a budget at Craigie

risottoWe have a great cookery course at Craigroyston Community High School – the focus is on inexpensive, nutritious cooking for families – using only own brand items – and they make really delicious rissottos, thai curries and other tasty dishes all for a weeny weeny amount of money.

The course is free but we do ask for a £1.50 fee to pay each week towards ingredients. The idea is that participants come with containers and take away a substantial meal for a family of four – if  there are more in the family, I am sure there would be enough food!

The tutor is very friendly, patient and helpful and very enthusiastic about cooking. If people can get here they will really enjoy and benefit from the class – and be assured of a  good dinner on Wednesday nights!

Unfortunately we do not have a creche.

Craigroyston Community High School is on good bus routes – along Ferry Road or the 27 which comes down Pennywell Road.

Foodies Festival continues at Inverleith Park

The Foodies Festival has returned to Inverleith Park this weekend … 

This year’s new features including the Cake & Bake Theatre, Chocolate Theatre and BBQ Arena all went down a storm at the first of eight Foodies Festivals that took place in Brighton last weekend.

Top chefs from across Scotland, including Michelin-starred Jeff Bland from The Balmoral Hotel, Craig Sandle of The Pompadour by Galvin, Great British Menu contestant Mark Greenaway, Neil Forbes of Cafe St Honoré and John Quigley of Red Onion will cook their signature dishes live in the Chefs’ Theatre and explain how amateur cooks can prepare the same dishes at home.  The theatre will be compered over the three days by Foodies veteran Jacqueline O’Donnell of The Sisters in Glasgow.

As well as culinary lessons from the experts, Fringe Festival acts Gyles Brandreth and Stephen K Amos, who has competed on Celebrity Masterchef, will be donning chef hats and giving comical demonstrations.

Now in its seventh year, Foodies Festival has introduced new features to all events in 2013.  These include a spectacular Cake and Bake Theatre in association with Electrolux incorporating a ‘bake-along’ with members of the audience invited to participate.

2013 also sees the introduction of a dedicated Chocolate Theatre to showcase the world of chocolate and confectionary with daily demonstrations from David Greenwood-Haigh of Divine Chocolate. The specially-designed BBQ Arena features hourly BBQ classes and Man vs Meat competitions where contestants cook their own chicken wings, ribs, sausages and burgers and are then given 60 seconds to eat as much of their creations as possible with the crowd  judging who made the best effort.

In 2013, food-lovers can also enjoy the new dining and VIP area serving signature dishes from pop-up versions top Scottish restaurants.  The bar area has had a countryside makeover complete with hay bales and a focus on British cider and ale.  There is also a wide variety of tent and pagoda bars throughout the site selling cocktails, wine and champagne.  Foodies is proud to provide a platform to launch new drinks brands every year.

These new elements complement Foodies’ existing features including the Drinks Theatre where regular classes and demonstrations are given by some of the most talented sommeliers and mixologists and drink experts in the UK.

The extensive Producers’ Market sells a vast array of artisan produce from the local area and incorporates the Guild of Fine Food award-winning British produce.

Foodies will be showcasing local producers in Edinburgh including Summer Harvest Oils who will be selling their range of award-winning cold-pressed rapeseed oils, dressings, vinegars and mayonnaise.

Last year saw the successful introduction of Street Food Avenue to all Foodies events.  In 2013 the Edinburgh crowds can again enjoy the huge selection of ready-to-eat hot and cold food from around the world including hog roasts, exotic meats, tapas, churros, burritos, Moroccan tagines, South American prime beef, sausages, pizza, Jamaican and Thai street food.

The Children’s Cookery Theatre ensures children get involved and have the opportunity to learn more about eating and cooking healthy food with hands-on daily classes.

Relaxation in 2013 comes in the form of a City Beach where families can chill out on deckchairs with an artisan ice-cream or an afternoon tea whilst children build sandcastles.  Various specialist tea, coffee and fresh juice vendors can be found around the site.

The entertainment stage features live music acts performing every day until the later closing time this year of 8pm.
