MasterChef encourages families to Raise Some Dough this summer

Gary Maclean provides the perfect recipe for families to start baking in support of Mary’s Meals

MasterChef Gary Maclean is encouraging families to get baking over the summer holidays and raise vital funds for Mary’s Meals.

Scotland’s national chef, who won MasterChef: The Professionals in 2016, is supporting the charity’s Raise Some Dough campaign which asks people to host a fundraising bake sale to help feed hungry children.

Mary’s Meals serves nutritious school meals to more than 2.4 million children in 18 of the world’s poorest countries – including Ethiopia, Syria and South Sudan. The promise of a daily meal attracts children into the classroom, where they can gain an education and hope for the future.

For first-time bakers and kids keen to get involved in the kitchen this summer, Gary suggests biscuit making as the best way to get started.

He says: “It’s great to do this with kids because it should only take 15 to 20 minutes for a biscuit to bake, and it doesn’t really matter what shape they come out.

“I’ve got great memories of making biscuits with my mum.

“We can now introduce that side of it to our kids and it’s an entry point for them to start enjoying cooking and baking.”

Gary, who is executive chef at the City of Glasgow College, has been a long-time supporter of Mary’s Meals. He says: “Initially what brought Mary’s Meals to my attention was that connection between education and food.

“Obviously, we need both. But to bring that together, it really helps families getting children fed, but also getting them educated, because education can be their route out of poverty.”

And when asked which biscuits he’ll be enjoying with his family over the school summer holidays, the celebrity chef admitted: “I probably make more biscuits than I eat them! I like things with coconut, I do like dark chocolate.

“Over the summer holidays, I’d encourage parents and kids to get involved in Raise Some Dough. Any money raised goes a long way with Mary’s Meals, so every penny counts!”.

People across the UK can download a free Raise Some Dough fundraising pack from the charity’s website, which includes a book packed full of tasty biscuit recipes from some of the UK’s favourite celebrities – including Stephen Fry, Dame Joanna Lumley, Ellie Taylor, Rosemary Shrager and Judy Murray.

The charity will also send bakers a free mug-shaped cookie cutter, based on the mugs from which many children eat their daily serving of Mary’s Meals.

Gary Maclean’s Perkins Biscuits recipe

Perkins biscuits are not to be confused with the Yorkshire biscuit called Parkins. They are similar, but not the same. Perkins are worth a go if you like your biscuits with an oaty texture. This is my type of biscuit, another very easy one to make and I think they look amazing. You could also add your own twist by topping them with some dark chocolate.

Ingredients:

  • 120g / 4 ¼ oz Plain Flour/All-purpose
  • 120g / 4 ¼ oz Rolled Oats
  • 60 g / 2 ½ oz Unsalted Butter, diced and cold
  • 85 g / 3oz Caster Sugar
  • 1tsp Bicarbonate of Soda/Baking powder
  • ½ tsp Ground Ginger
  • ½ tsp Ground Cinnamon
  • ¼ Mixed Spice
  • 100g / 3 ½ oz Golden Syrup
  • 100g / 3 ½ oz Blanched Almonds.

Method:

  1. Pre-heat oven to 180°C/350˚F.
  2. Take the flour, bicarbonate of soda/baking powder, ginger, cinnamon and spices and sift them into a large bowl.
  3. Add the butter and rub until the mixture resembles breadcrumbs.
  4. Add the oats, sugar, and mix.
  5. Take a small pan and warm the golden syrup until it is of a pouring consistency, try not to heat it too much.
  6. Pour the golden syrup into the bowl and mix to form a stiff dough.
  7. Line two baking trays with parchment paper.
  8. Split the mixture in half and roll into a long sausage shape.
  9. Cut the sausage shape into 12 equal parts, do the same with the other half of the dough, you should end up with 24 pieces.
  10. Roll each piece up into a ball, split the balls between the two trays leaving a gap between the balls.
  11. Gently press the tops of your biscuits with your thumb and top each with a blanched almond.
  12. Bake in your oven for 10 minutes, until the biscuits have spread and are golden.
  13. Leave to cool on the tray until cool enough to touch before transferring to a wire rack to cool completely.

1. 5-Ingredient High Protein Brownie Recipe

INGREDIENTS (SERVES 8) 

METHOD 

  1. Preheat the oven to 180°C/160°C fan. 
  1. Mash the bananas and mix in the peanut butter. 
  1. Mix in the protein powder and the cacao powder. 
  1. Transfer into a lined baking and scatter chocolate chips. 
  1. Bake for 20 minutes and leave to cool before slicing. 

2. Lucy Watson’s Vegan Banana Bread Recipe 

 We may not have Paul Hollywood, but we’ve got a nice bake that’s not too much of a technical challenge and leaves no risk of a soggy bottom! 

This banana bread is vegan friendly and super easy to make. 

INGREDIENTS (SERVES 6)

  • 3 Large Ripe Bananas 
  • 70ml Vegetable Oil 
  • 100g Brown Sugar 
  • 1 tsp Cinnamon 
  • 200ml Almond Milk 
  • 300g Plain Flour 
  • 3 tbsp Cocoa Powder 
  • 1/2 tsp Salt 
  • 1/2 tsp Vanilla Extract 

For topping: 

  • 1 Banana 

METHOD 

  1. Preheat oven to 200c (180c fan, gas 6), and grease a 900g loaf tin with a little oil. 
  1. Peel the bananas and put them in a large mixing bowl. Mash them well until they are creamy. Add the oil, sugar, cinnamon and milk. Combine well. 
  1. Sift the flour, cocoa powder, baking powder and salt, then add the nuts and chocolate. Stir with the wooden spoon until all the ingredients have been incorporated. Pour the mixture into the prepared tin loaf. 
  1. Peel the banana and slice it lengthways. Lay both pieces on the loaf with the inside facing up. Sprinkle with sugar. Bake in the centre of the oven for 50-60 minutes until cooked through and a skewer inserted into the centre comes out clean. If there is cake mix on the skewer, return the loaf to the oven for 5-10 minutes more. 
  1. Leave it to cool in the tin for 5 minutes, then turn it out onto a wire rack to cool a little more. 
  1. Slice and serve warm. We love it with peanut butter smothered on top! 

3. Chocolate Almond Protein Doughnuts 

 These Chocolate Almond Protein Doughnuts will be your new favourite way to meet your protein goal. They’re baked instead of fried, keeping your cravings in check and your nutrition on track.

INGREDIENTS (SERVES 6)

  • 1 flax egg or 1 regular egg* 

You can create a vegan egg alternative by mixing 1 tbsp milled flaxseed with 3 tbsp warm water and leaving it to set for 10-15 minutes. 

TO MAKE THE FROSTING: 

METHOD: 

  1. Preheat your oven to 180C/160C fan. 
  1. Mix all the doughnut ingredients in a bowl, then divide between 6 lightly oiled silicon doughnut moulds. 
  1. Bake for 15 minutes, then leave to cool completely. 
  1. To make the frosting, add the almond butter and coconut oil in a heat-proof bowl, then microwave for a few seconds to soften, then pour in the zero-calorie maple syrup. Mix to create a smooth frosting. 
  1. Dip each doughnut in the frosting mixture, then decorate with some cacao nibs. Enjoy! 

4. Bulk Baked Oats 

 Oats are one of the most versatile breakfast ingredients. A healthy source of fibre and carbohydrates, they are a great addition to smoothies, soaked overnight with fruit toppings and now, our favourite – baked.  

Therefore, step up your breakfast with a baked oats recipe that gives the texture of a fresh baked cookie – crisp on the outside, warm and gooey on the inside.  

Perfect for those cool mornings, here is the Bulk Baked Oats recipe. Even better – it’s super simple, 100% vegan and 100% delicious.

  1. Preheat the oven to 180 degrees 
  1. Blend all ingredients together (minus the Vegan Protein Chocolate Buttons)⁣⁣ 
  1. Bake in the oven for 30-35 mins at 180 degrees⁣⁣ 
  1. Top with Vegan Protein Chocolate Buttons, Peanut Butter, fresh berries or any other toppings of your choice and dig in! 

5. High-protein Brownie Cupcakes 

 Who can resist a cupcake? Or, more accurately, who can resist a decadent, chocolatey, spongy cup-cake that’s both high in protein and low in carbs?  

This high-protein cupcake recipe is made to curb chocolate cravings and add a bit of joy to your diet. Replace those lifting gloves with some oven mitts – it’s baking time.  

WHAT ARE THE MACROS AND CALORIES? 

  • 269 Kcals 
  • 12g Protein 
  • 17g Fat 
  • 17g Carbs 

 INGREDIENTS (SERVES 6): 

  • 85g Fat Free Greek Yoghurt 
  • Duo Milk & White Chocolate Hazelnut Protein Spread  
  • 1 Medium egg 
     

METHOD: 

  • Chop up the Protein Chocolate 
  • Mix the egg, powders, flour, almonds, oil and greek yoghurt. 
  • Place the mixture into a baking tray. 
  • Bake for 15-20 minutes at 160C/180C fan 
  • Top them with Protein Spread and one square of Protein Chocolate

Edinburgh bakers urged to raise some dough for Cancer Research

The Great Celebrity Bake Off for Stand Up To Cancer’ is back with new kitchenware in Cancer Research UK shops

BAKERS from Edinburgh and the Lothians are being urged to grab their mixing bowls and whip up some cash, as ‘The Great Celebrity Bake Off for Stand Up To Cancer’ returns to Channel 4 tomorrow (March 22).

Everyone from baking beginners to patisserie pros are being asked to don their aprons in aid of Stand Up To Cancer, the joint fundraising campaign from Cancer Research UK and Channel 4.

Getting started is a piece of cake with a free fundraising kit to download full of tips, recipes and ideas for getting friends and family involved in raising some serious dough for life-saving research.  

Fans of the show can also support the cause with striking new Star Baker themed kitchenware available from Cancer Research UK shops in Edinburgh and the Lothians or online, as well as via retailer Next.co.uk.* 

The range features everything foodies and fundraisers need to create their signature bakes in style including an apron, oven gloves, a trio of tea towels and a mug.

In Scotland, around 32,200 people are diagnosed with cancer a year.**

Stand Up To Cancer aims to get new cancer tests and treatments to people who need them the most. Since its launch in 2012, the campaign has raised more than £93 million to fund 59 clinical trials and research projects across the UK.

These include the development of new treatments that use viruses to fight cancer, clinical trials testing potentially more effective ways to deliver radiotherapy and improved surgical techniques for bowel cancer.  

Linda Summerhayes, Cancer Research UK spokesperson in Scotland, said: “One in two of us will get cancer in our lifetime***, but all of us can play a part to help beat it. That’s why we need people across Edinburgh and the Lothians to help us turn up the heat on this devastating disease.

“We hope these special episodes for Stand Up To Cancer will encourage viewers to host their own baking fundraiser. It doesn’t matter if you aren’t a whizz in the kitchen, you can look the part with our new Star Baker range. The most important thing is raising money to help speed up research and save lives. Every last crumb will make a difference.”

The celebrity contestants putting their skills to the test in the Bake Off tent and hoping to inspire some show-stopping fundraising results include Olympic champion Sir Mo Farah; singer-songwriter Example; singer-songwriter and UN Environment Ambassador Ellie Goulding; TV presenters Sophie Morgan and Emma Willis; actor, Blake Harrison; comedian, writer and TV presenter Ruby Wax and judge, presenter and dancer Motsi Mabuse.

A Nostalgic Nation?

Brits’ favourite ways to spend time with their Grandparents

  • –    Psychotherapist, Andre Radmall, explains why it’s so important for grandchildren to spend time with their grandparents.

Reminiscing about the past (32%) is the nation’s favourite activity to do with their grandparents, new research has revealed. 

The study was conducted by Gala Bingo, the nation’s favourite bingo site, to launch its new Paddle Pals TV advert, which celebrates the bond we have with our grandparents. 

Playing card games (31%), looking through old photographs (30%) and baking (30%) were some of the other ways in which we cherish time with Grandma and Grandad.  

Men and women tend to have different favourites, however, as while talking about history is the favourite grandparent pastime for men, baking takes the top spot for women. Almost two in five (38%) women say baking is their favourite thing to do with their grandparents, compared to just 21% of men. Yet men and women equally enjoy spending time planting and pruning in the garden (26%) with their elders. 

Interestingly, age plays a part in which activities are most enjoyed. Cooking alongside their grandparents is a popular activity for both the 25-34 (41%) and the 35-44 (33%) age groups. For the younger generation (18-24), taking the dog for a walk with their grandparents topped the list at 31%. 

Overall, the nation’s top 10 favourite activities to do with their grandparents are:  

  1. Talking about the past – 32% 
  2. Playing cards – 31% 
  3. Going through old photos – 30% 
  4. Baking – 30% 
  5. Cooking – 28%  
  6. Playing board games – 28% 
  7. Gardening – 26% 
  8. Walking – 23% 
  9. Going to the park – 23% 
  10. Doing puzzles, crosswords, word games –20% 

Dog walking (15%), taking a trip to the beach (15%) and puzzling over jigsaws (19%) were among the other wholesome activities that were mentioned but didn’t quite make the top 10. 

Sporty activities such as swimming (4%) and bowling (3%) were some of the least popular endeavours. 

There is also variation across the UK. Playing board games with the grandparents is the preferred activity for people in Bristol and Edinburgh (both 37%) whereas taking a stroll around a park is the favourite thing to do for those in Liverpool (31%) and Sheffield (33%).  

Psychotherapist and author Andre Radmall said: “The relationship between grandparents and their grandchildren is immensely important. Spending time with each other provides innumerable benefits for both. 

“Grandchildren can learn from the experience of grandparents, passing on their wisdom through to adulthood which can be a rewarding and meaningful experience for grandchildren.”  

Karina Adrian, head of brand marketing at Gala Bingo, said: “It’s really great to see the nations appreciation and love we share for our grandparents.

“There are so many shared experiences between a grandparent and their grandchild, with this research reflecting just how much of a positive impact the bonds with our grandparents can have on us as adults. 

“We hope this research has inspired people to spend some quality time with their grandparents this week and reminisce on good times spent with them.”

Stefano suppies Edinburgh bakeries

Top private chef Stefano Sanna has been improvising during lockdown by providing several Edinburgh bakeries with his authentic Italian breads and baked goods.

Originally from Sardinia, Stefano owns Shardana Catering, a private catering company based in Edinburgh. Stefano has responded to Covid-19 restrictions which make it difficult for him to cater events and is baking up a storm with focaccia, speciality breads and bomboloni – Italian style doughnuts.

Stefano explained: “I run an independent private catering company in Edinburgh, perfect for dinner parties and small events across Scotland. When the first lockdown was announced I pivoted to offer private chef services in people’s homes. I also started a home delivery service which sells a few Italian traditional staples.”

The characterful Italian chef has continued to offer his delivery service throughout autumn and winter, with mouth-watering menus which can be easily reheated and served at home.

With lockdown restrictions changing daily, Stefano turned his skills as a chef to baked goods. “When the second Edinburgh lockdown hit, fewer people required private chefs. I began to supply local Edinburgh bakeries with tasty Italian baked goods.”

Stefanois now supplying his delicious baked goods to a number of outlets across the capital. These include Victor Hugo Delicatessen, on Melville Terrace; Il Fruttivendolo, on the High St; Di Giorgio, on Brandon Terrace and Maria’s KAKES, in Albert Place.

Stefano is a busy man adjusting to his new baker’s schedule. “The new routine is different to adjust to as I am up early in the morning cooking for the bakeries and then cook for our home delivery menu”.

Luckily for Stefano, under current Edinburgh rules Shardana Catering can now continue to offer private chef services.
