Johnnie Walker Princes Street unveils first AI-powered Whisky Bottle personalisation experience

  • Johnnie Walker x Scott Naismith will offer guests the chance to co-create their own one-of-a kind Johnnie Walker Blue Label bottle with Scottish Artist
  • Naismith, renowned for his bold, colourful abstractions of Scottish skies, coasts and landscapes, has a long-standing relationship with Diageo, creating works for the ‘Four Corners’ distilleries and Johnnie Walker Princes Street
  • The AI system has been custom trained to deliver this generative experience and features the use of cutting edge digital direct to bottle print technology

Johnnie Walker Princes Street, the World’s Leading Spirit Tourism Experience*, is inviting guests to discover Johnnie Walker x Scott Naismith, harnessing cutting-edge, purpose-built AI-technology to co-design their very own unique bottle of Johnnie Walker Blue Label.

Only available at the Edinburgh venue, the experience is set to run from August 1-31 2024, and is believed to be the first ever to combine world-class Scotch whisky, art, and AI.

The journey will invite visitors to shape their co-creation by answering simple prompts that will influence key themes in Scott Naismith’s work and ultimately their bottle design. Guests will answer up to three questions across four categories influencing the specially developed AI’s generation of colour, location, artistic style and even time of day.

This will then determine the eventual look of their one-of-a-kind bottle, which is then processed real time, colour managed and printed in a matter of minutes using cutting edge digital direct to shape print technology.

The Johnnie Walker x Scott Naismith experience will be available for a limited time, and guests will be able to access it with every purchase of Johnnie Walker Blue Label in the venue’s retail store throughout August.

The bottle design element can be complimented at no extra charge by a bookable expert-led tasting of Johnnie Walker Blue Label, as well as a guided tasting of the incredibly special limited edition Johnnie Walker Blue Label ‘Elusive Umami’, in the rooftop Explorers’ Bothy bar. In addition to stunning views, the tasting will offer guests an up-close look at some of Scott’s previous work, which was created for Johnnie Walker Princes Street’s opening.

Naismith’s striking artwork includes the stunning Scottish landscapes surrounding the four key distilleries which contribute to the world’s number one Scotch Whisky brand1; Cardhu in Speyside, Clynelish in the Highlands, Glenkinchie in the Lowlands and Caol Ila on Islay. The Johnnie Walker brand has well established connections with the artistic community itself, through partnerships with the likes of James Jean and graphic designer Kushiaania.

Johnnie Walker Princes Street keeps pushing boldly into the future of whisky experiences. Opening its doors in 2021, the highly anticipated attraction quickly became known for utilising modern technology to carve pathways for guests into whisky flavours and sharing the fascinating history of Johnnie Walker through immersive tours and tastings.

Most notably, its signature Journey of Flavour experience has successfully used innovative AI technology to map out flavour preferences for visitors based on their specific palates, helping whisky lovers and novices alike explore the versatility of Scotland’s national drink.

Working closely with Johnnie Walker Princes Street and Diageo’s Breakthrough Innovation team in partnership with full service Creative & Technology agency, Phantom, Scott Naismith is excited to be at the forefront of such a pioneering take on art and whisky.

He said: “I believe creativity takes courage and boldness in risk taking. The project at Johnnie Walker Princes Street shows this throughout and as a consequence has been an honour to be a part of.

“With a brave exploration into the cutting-edge world of AI, this latest project is bound to surprise and impress in equal measure. I am excited to be part of it and am again impressed at the continued creative vision from the team at Johnnie Walker.”

Rob Maxwell, Head of Johnnie Walker Princes Street, said: “Since opening, Johnnie Walker Princes Street has striven to become a leader in using the power of AI to personalise guests’ experiences.

“Johnnie Walker x Scott Naismith is an exciting new step in our commitment to offering those with various tastes and interests something completely different to what’s available in the whisky experience market.

“This partnership is a true one-of-a-kind, and we can’t wait to see the designs our guests will print on their bottles.”

Will Harvey, Senior Global Innovation Manager at Diageo, added: “This is the first pilot in a wider platform that the Breakthrough Innovation team is exploring, looking at how we can use AI responsibly to enable co-collaboration between fans and artists.

“Demand for personalisation shows no signs of slowing down, so we’re delighted to offer the chance to create one-of-a-kind AI-enabled designs with Scott. With Johnnie Walker Princes Street’s previous experience of using AI to enhance customer experiences, it’s the perfect place for us to launch this innovative offer to the world.”

Johnnie Walker Princes Street lights up Edinburgh to mark world exclusive

  • New Blue Label variant capturing the elusive taste of umami, in first-of-a-kind collaboration with renowned Chef Kei Kobayashi, can only be purchased at Johnnie Walker Princes Street
  • Whisky fans can purchase the limited edition bottling from today, with bespoke cocktails and immersive tasting experiences available in the coming weeks.
  • Edinburgh’s West End will be illuminated with a stunning new projection as part of a complete takeover of the venue.

Johnnie Walker, the world’s number one Scotch Whisky brand1, today unveils Johnnie Walker Blue Label Elusive Umami – a pioneering expression inspired by the enigmatic flavour also known as the fifth taste, which will be available exclusively at Johnnie Walker Princes Street from today, before launching worldwide on October 16.

Taking inspiration from Japanese Zen Calligraphy, the projection onto Johnnie Walker Princes Street celebrates the ancient art form with silhouetted artists’ intricate brush strokes combined with elements from the beautifully crafted Umami Blue Label packaging on the side of Princes Street’s biggest canvas.

Arriving at Edinburgh’s eight floor whisky experience before anywhere else in the world, Johnnie Walker Blue Label Elusive Umami is a limited-edition release crafted by Master Blender Emma Walker and renowned Japanese Chef Kei Kobayashi of Paris’ three Michelin Star restaurant Kei.

The pair joined forces to create a Scotch that encapsulates the inscrutable taste of umami, a Japanese word used to describe what is a hard-to-define flavour, possessing mysterious qualities.

The result – a beautifully balanced Scotch of sweet and savoury flavours, with notes of blood oranges and red berries with sweet wood spice, a touch of smoked meat, a hint of salt and pepper with a long, sweet fruit finish. Selected casks from inland and coastal distilleries are hand-picked at the height of their maturation for their unique umami profile – only one in 25,000 casks succeeds in bringing this elusive character to life.

In addition to being the first in the world to get their hands on this incredible new whisky, Johnnie Walker Princes Street guests will also have the chance to enjoy a limited-edition Umami cocktail on the 1820 Bar roof terrace and take part in an immersive 60-minute tasting experience, with details set to be released on Johnnie Walker Princes Street’s social media profiles in the coming weeks.

Johnnie Walker Master Blender, Emma Walker, says: “When Chef Kei and I set out to capture the essence of umami, we wanted to push the boundaries of what Scotch could be and bring a truly innovative offering to the world of whisky and flavour.

“For Johnnie Walker Blue Label Elusive Umami, only one in 25,000 casks in our unparalleled reserves of more than 10 million maturing casks made the cut in our painstaking search for that elusive flavour profile – each expression of whisky was hand-picked to create an umami profile, just like ingredients for a recipe, allowing us to bring the unique character of this innovative whisky to life.”

Chef Kei Kobayashi adds: “Umami possesses a mysterious quality that ignites our senses, revealing sumptuous taste, complexity, and depth.

“Encapsulating that alluring flavour through Johnnie Walker Blue Label Elusive Umami allows you to immerse your palate in an exquisite Scotch Whisky of subtle richness.”

Rob Maxwell, Head of Johnnie Walker Princes Street, says: “Johnnie Walker is renowned for pushing the boundaries of what’s possible in whisky, and Johnnie Walker Blue Label Elusive Umami does just that.

“This collaboration is an expression of taste that’s rarely seen in the world of whisky, and one that is set to inspire a new generation of whisky lovers. It’s exciting that we are the world’s first location to stock this exclusive dram at Johnnie Walker Princes Street. We can’t wait for you to taste it.”

Available exclusively at Johnnie Walker Princes Street in Edinburgh from September 18, 2023, and available to buy globally from October 16, 2023.

Each cocktail offers a unique story with a focus on flavour, that will be shared with the guests during their experience.

From a Hedgerow Aquavit, created from foraging for berries nearby the Glenkinchie distillery, to a Cliff Edge Vermouth, using botanicals from the Four Corners of Scotland distilleries, Miran has embraced new techniques to capture each guest’s attention by bringing the whiskies into a new light.

Known for their new age approach to fine dining and storytelling through micro dishes, Chefs James and Maria Close have created six small bites, to match the cocktails, with layers of luminous flavour and textures to delight.

Guests can expect a culinary showcase of unexplored food combinations, from rich, umami intensity within the Aguachile Oyster bite, to soft, sweet indulgence within the Green Apple.

STIR features three flights:

  • The Four Corners Cocktail Flight takes guests on a beautiful journey exploring the Four Corners of Scotland distilleries, Glenkinchie (Lowlands), Cardhu (Speyside), Clynelish (Highlands) and Caol Ila (Islands), with each one integral to blending Johnnie Walker whisky. The combination is a complete experience carefully curated to highlight the landscape of the distillery, with locally grown and foraged ingredients from the naturally occurring flora and fauna.
  • The Seasonal Cocktail Flight allows guests to take a short trip, experiencing a rotation of exclusive whiskies and seasonal ingredients, selected by the Johnnie Walker Princes Street team. The Spring Season highlights the unique Johnnie Walker Princes Street Spring blend.
  • The Johnnie Walker Blue Label Cocktail Flight is an opportunity to savour this iconic whisky in an unexpected way. The cocktail is paired with the most exquisite small bite, a luxurious moment of indulgence for Johnnie Walker Blue Label connoisseurs.

Miran Chauhan, Head Bartender at Johnnie Walker Princes Street, said: ‘We see STIR as the portal to a new world of whisky and food combinations, in the heart of Edinburgh at Johnnie Walker Princes Street.

“James and I have a shared obsession for flavours and techniques and together we’ve created an enticing and highly original taste experience for everyone to enjoy.”

James Close, two Michelin-starred-Chef of Raby Hunt Restaurant, said: “We approached this challenge with the same energy and enthusiasm as we always do, creating a set of signature dishes that derive from a single ingredient, inspired by a global adventure.

“And then just like Miran does with his cocktails, we bring layers and textures together to tell a unique story through taste.”

Back in Edinburgh for the collaboration, James is returning to the capital after living in Scotland as a young man, when he worked in the menswear department of House of Fraser, in the very building that is now Johnnie Walker Princes Street Edinburgh.

Reservations for STIR are available now and can be made online at johnniewalkerprincesstreet.com from 17:30PM, Wednesday – Saturday.

Multi-award winning, Johnnie Walker Princes Street, is the centrepiece of Diageo’s £185million pound investment in Scotch whisky tourism in Scotland – the largest single investment programme of its kind ever seen in Scotch whisky tourism.

Offering more than 800 flavour combinations, unique immersive tours and breath-taking views of the Edinburgh skyline, one person could visit Johnnie Walker Princes Street every day for more than two years still and not have the same experience twice.

Committed to delivering new experiences for guests, every season STIR will evolve the menu to suit the season, with a twist on the Seasonal Cocktail Flight, as the cocktail and small bite influenced by the limited-edition Johnnie Walker Princes Street blend of whisky, changes with the time of year.

Jurica Gojevic, Food and Beverage Manager at Johnnie Walker Princes Street, says: “What makes James’ success so remarkable is that he is completely self-taught and has a curiosity for international ingredients.

“I knew his innovative approach would perfectly match Miran’s unorthodox methods to mixology and give us an opportunity to truly push the boundaries of flavour and fun with a one-of-a-kind menu.

“Through STIR we’re creating something totally unexpected and delivering an unforgettable experience for our guests at Johnnie Walker Princes Street.”
