Sophie Michell, Byron’s new Food and Drink Director, this month launches a brand new line up of dishes at Byron restaurants nationwide.
Sophie has been tirelessly working behind the scenes in the Byron kitchens, testing and perfecting the new menu, as well as reviving classics and revamping Byron’s signature burger.
Having tested over 20 different versions of their bread bun, looked closely at the anatomy of each and every burger, and tweaked the seasoning across all of their dishes, Sophie is finally ready to reveal the fruits of her labour. The new menu follows Byron’s recently announced new look logo and rallying cry All Hail The Table, encouraging guests to celebrate the humble dining table where, in their opinion, all the best things happen.
Drawing inspiration from the flavours of the East and West coasts of America guests can expect upgraded burgers, grain bowls, desserts and the return of a much-revered Byron staple – skin-on fries.
The New Byron is a redesign of the signature burger, amped up with more flavour, bespoke cheese slices and house-made bread and butter pickles – a total showstopper. The Bulleit Bourbon Smokey is a flavoursome burger inspired by the tastes of Kentucky, combining smokey Bourbon depth with creamy ranch sauce, crunchy slaw and fried jalapenos.
The Le Bleu redefines a premium burger, with its beefy flavour, thick grilled onions, premium French blue cheese, port-laced onion jam, wholegrain mustard mayonnaise, & spinach – this one is for the grown-ups. For the chicken lovers, Byron have combined two of its classic chicken burgers to create the Clucky Smashed Avo.
A spicy buttermilk-fried chicken breast, sriracha mayo, pickled red onions, and of course smashed avocado. Utilising seasonal produce, the Superfood Grain Salad combines quinoa, lentils, roast squash and beetroot, and is topped with omega-3 oil rich seeds to create a tasty, wholesome dish.
Byron also welcomes the Vanilla Chess Pie, (below), a vanilla scented buttermilk custard tart with an all-butter pastry, served with Bulleit bourbon caramel sauce and vanilla whipped cream. Additionally, Byron fans will be pleased to learn that the skin-on fries are back, now generously sprinkled with secret seasoning packed with flavour.
To celebrate the new menu, Sophie Michell will be hosting an exclusive A Seat At The Table supper club at Byron’s Waterloo restaurant. A handful of lucky guests will win the chance to dine with Sophie on Wednesday 20th November and test out the new dishes. Entries via Byron’s website.
